Apparently, we went on a Mexican food phase lately in our house because I’ve been sharing a bunch of our family’s all-time-favorite Mexican recipes. Do you go through phases like that in your house? If you don’t you will want to hop on to the Mexican food train that I’ve started here on the blog and plan to make these great dishes in the near future.
Today I want to share with you the Mexican Rice recipe that I use on the side with most every Mexican dinner I make. It is a great complimentary dish to add to your tacos and enchiladas.
Mexican Rice Recipe
*originally adapted from Life in the Lofthouse but we’ve changed it a lot to meet our taste buds!
|1||cup||water + 1 chicken bullion cube|
Add chicken broth, water and bullion to your pot. Bring to a rapid boil. Break up the bullion cube while boiling. Why do I use bullion instead of 2 cans of broth? Because it adds SO much more flavor to the rice. It’s life changing, trust me.
Add your rice. Remove from heat and let stand for 5-10 minutes.
Add your salsa, garlic powder, and cumin. I also add about 1-2tbs of shredded cheddar. Again, it’s life changing.
Enjoy a flavorful Mexican dinner with your family.
