I can’t wait to share this new recipe today. I feel like I struck gold on the healthy eating jackpot!

These dairy and gluten free chicken fingers were awesome. I was a little worried they wouldn’t be a big hit because they weren’t coated in breadcrumbs, Bisquick or flour but my family ate them right up!

Since I am doing Trim Healthy Mama I needed a recipe that didn’t use bread and flour. I even had the thought that nothing would taste as good as what we are used to, but I was wrong. These tasted great and were crunchy.

If you are looking for a healthier option, or are on a low carb diet then you’ll want to try out these chicken fingers-they only use 3 ingredients! You can’t beat that.

Dairy and Gluten Free Chicken Finger Recipe

3 piecess chicken breast cut into tenderloins
1 1/2 cups almond flour
1 teaspoon salt
1 teaspoon pepper
12 cup Almond Milk
2 large eggs

For the breading- whisk egg and milk in a large bowl. Add chicken and let sit for about 10 minutes.

Add almond flour to a shallow dish or pan, season with salt & pepper.

Coat chicken with flour.

Fry in small batches until golden brown and internal temperature reaches 160º.

I used my new to me Air Fryer from my mom for these. They turned out perfectly! They were still crispy and cooked to perfection. This might just become my new favorite homemaking tool! Another plus was that my house didn’t smell like fried chicken for the remainder of the evening and I didn’t have to babysit the chicken, I could prepare other food or do some cleaning while they cooked without my attention. I definitely think every Mama should have an Air Fryer.

You can bake at 425 degrees for 20 minutes if you want to avoid frying! Turn them over once halfway through.

These were so good that I definitely plan on using this recipe many times! It’s low carb, no dairy AND gluten-free and fits perfectly for a THM S!
